Toe brakes

Most probably mentioned somewhere.  

Do the rudder pedals in Cozy / EZ have toe brakes ? Looks like the master cylinders are fixed to the pedals and not independent to the rudder, in other words at all times they simply activate together with the rudder movements, is this correct ?

No, they do not have toe brakes.

The first half of rudder pedal movement is rudders, then after the rudders are fully deployed the wheel brakes start to actuate.

 

I haven't operated this system yet, but most canard pilots say that it works fine.

If you look at the attached drawing the blue area depicts a rod that is threaded into which the master cylinder rod threads into.

The blue section guides the master cylinder rod into the tube and keeps everything aligned. 

Once the outside tube hits the adjustable stop nut, the master cylinder is engaged.

I can see the simple design, only 2 master cylinders for both sets of rudder pedals.

 

In conventional aircraft when applying foot pressure to the right pedal the left pedal will move towards you. In the cozy does the left pedal remain static when applying pressure to the right pedal ?

On all of the Rutan based designs, the rudders move independent of each other and only travel outward.

You can deploy both rudders at the same time to create additional drag as you approach the runway.

The square tube has holes in it for adjustment.

 

Also, we need to use a 2.5:1 leverage ratio for mounting the master cylinder to the rudder pedal, and the attached image is closer to a 1:1 ratio so its wrong.  But the image should answer your question.
